The rich flavors of these simple lamb "lollipops" are complemented by the Latin-inspired yogurt sauce.
Ingredients
Lamb Lollipops:

Preparation
Cut the rack of lamb along the bone into chops, then season with salt and pepper.
Make yogurt sauce by combining cilantro, jalapeño, lime zest, lime juice, Greek yogurt, cumin, and salt in a bowl. Mix thoroughly, then set aside.
Heat olive oil in a pan over high heat and sauté each piece of lamb for 2 minutes on each side for medium doneness.
Serve with yogurt sauce on the side.
