These tasty potato pancakes of love are great to serve any time of the year, especially when served with smoked salmon, sour cream, and applesauce.

Preparation
Use the largest setting on a box grater to grate the potatoes and onion.
In a large mixing bowl, combine beaten eggs with salt. Add potato and onion shreds, mix well, add flour, and mix again.
Heat oil in a 12-inch skillet over high heat until shimmering. Working in batches, spoon about 4 ounces of the mixture into the skillet per latke, flattening the tops slightly. Reduce heat to medium-high and cook until the bottoms are browned, about 5 minutes. Flip latkes and cook 5 more minutes.
Once cooked, transfer latkes to a paper towel-lined plate. Repeat with all remaining mixture. Serve latkes while hot with applesauce, sour cream, or smoked salmon.
