Preparation
For the Salisbury steaks, add all ingredients except the olive oil to a large bowl, then mix until well combined. Shape the mixture into 5 equal, oval patties, about 1-inch thick.
In a large nonstick skillet, warm the olive oil over medium-high heat. Add the steaks and cook for about 3–5 minutes per side, or until they are dark golden brown, then transfer to a plate and reserve.
For the gravy, reduce heat to medium and in the same skillet with the drippings, add the butter and flour and whisk until smooth.
Reduce heat to medium-low, then add the bone broth, Worcestershire sauce, and onion and garlic powders, whisking to combine. Add the mushrooms, then simmer for 6–8 minutes to thicken. Season with salt and pepper, to taste.
Add the partially cooked steaks back to the skillet and nestle them into the gravy. Cover and cook for 12–14 minutes, or until a probe thermometer inserted into the center shows an internal temperature of 160°F.
Serve steaks with mushroom gravy drizzled on top.
