Grilled Asparagus with Sauce Gribiche

A classic French sauce that’s simple to prepare, sauce gribiche elevates simply grilled spring veggies like asparagus.
Ingredients
Grilled Asparagus:

Sauce Gribiche:

Preparation
For the grilled asparagus, heat grill or grill pan on high. Wash and trim the bottom 2–3 inches of the asparagus to remove the woody portion. Toss the asparagus in 2 tablespoons of olive oil and season with salt.
Lay the asparagus in a single layer on the grill and grill for 30–40 seconds, until just beginning to char. Flip asparagus and repeat on the other side. Remove asparagus from the grill and arrange on a serving plate.
For the sauce gribiche, split the eggs in half, dice small, and place in a work bowl. Add the remaining ingredients and stir to combine. Adjust seasoning with salt and pepper, then serve over grilled asparagus.
