Grilled Cumin Prawns with Avocado Salsa

Ready to get your grill on? Skewer marinated prawns with fresh cherry tomatoes for a delicious and easy shrimp-kebab. For a full spread, pair with homemade Avocado Salsa.
Ingredients
Grilled Prawns:
- 24 prawns (16–20 count), peeled and deveined
- ¼ cup extra virgin olive oil
- 2 tablespoons fresh thyme
- 3 tablespoons minced shallots
- 1 tablespoon cumin
- 2 tablespoons chopped basil
- Kosher or sea salt, to taste
- Cracked black pepper, to taste
- 18 cherry tomatoes
- Juice of ½ lemon
- 6 skewers, soaked in water for 6 hours
Avocado Salsa:
- 1 ripe avocado, diced
- 1 small red onion, diced
- 1 small Roma tomato, seeded and diced
- 2 tablespoons chopped cilantro
- Juice of ½ lemon
- 2 tablespoons olive oil
- 1 tablespoon white vinegar
- Kosher or sea salt, to taste
- Cracked black pepper, to taste
Preparation
Marinate the prawns in olive oil, thyme, shallots, cumin, basil, salt, and pepper for at least 4 hours before grilling.
Once marinated, skewer the prawns and cherry tomatoes, then grill for 3–4 minutes on each side. Season with lemon juice, salt, and pepper while grilling.
For the avocado salsa, combine all ingredients then chill in the refrigerator for 15 minutes.
