With its nutty, creamy flavor, tahini (a.k.a. toasted sesame paste) is the star of these tantalizing cookies.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon kosher salt
- ¾ cup (1½ sticks) unsalted butter, room temperature
- ¾ cup granulated sugar
- 3 tablespoons honey
- ¾ cup tahini, room temperature
- ¼ cup toasted sesame seeds
Preparation
Heat oven to 350°F.
Whisk together the flour, baking powder, and salt in a medium bowl.
In a stand mixer or hand mixer with a large bowl, mix the butter, sugar, and honey on medium until light and fluffy, about 3 minutes. Beat in the tahini. Add half of the flour mixture and beat until incorporated, then add the rest and beat to combine.
Place the toasted sesame seeds in a small bowl. Scoop 1 heaping tablespoon of cookie dough and roll into a ball. Dip cookie dough ball in the sesame seeds, then place sesame-side up on large, rimmed baking sheet, leaving about 2 inches between each cookie. Repeat with the remaining dough.
Bake the cookies until golden brown, 13–15 minutes, rotating the baking sheet halfway through cooking. Allow cookies to cool on the baking sheet before serving.
